This dish came from a sudden need: the weather is awful, I just don’t want to go out anywhere to buy food. In such situations you usually find out, that your fridge and your cupboards are not completely empty. They never are. I usually explore new, very interesting tastes in such cases: I mix everything which can be mixed and what in that moment is in my kitchen. This dish additionally needs only one pot: not only you use your leftovers but also it is very convenient :)

How often happens to you, that you cook a little bit too much of something? How often you don’t use what’s left of once opened product? Challenge yourself! Try not to throw away any food for at least one month. Too much of pasta, groats, rice? Use it the next day for another meal or in a cold lunch, which you can take to your work. Too much lentils or beans? Mix it to make some bread paste. That is only a small tip of what you can do with the so-called leftovers. It is a very interesting and satisfying experience. Besides: who really likes to throw food away?



Ingredients (2-3 persons):

2 small onions

2 garlic cloves

1 cm fresh ginger

1/2 cup millet*

1/3 cup lentils*

6 mushrooms

1/2 avocado

8 cherry tomatoes

salt, pepper, nutmeg, oregano


  1. Peel avocado. Cut avocado and mushrooms into cubes.
  2. Cut onion and put it in a pot with small amount of oil. Add chopped ginger and after about 2 minutes – chopped garlic.
  3. Increase the heat and add mushrooms, mixing from time to time.
  4. After a few minutes, when mushrooms are a little fried, decrease the heat, add millet, mix with mushrooms and pour two glasses of boiling water.
  5. After a few minutes add lentils, salt and mix.
  6. Add other spices and simmer, until all the water is absorbed. Try it- when it is still hard add some boiled water.
  7. When the millet and lentils are ready, add avocado and cherry tomatoes cut in half.

* Or excess of already cooked once, which you wanted to throw away.
